Father’s Day is this weekend. On Sunday, June the 19th, we will be celebrating my husband and father-in-law. I don’t want to brag but I must admit that we have some amazing men in our family. My daughters are so fortunate to have an awesome father and grandfather.
For those of you who do not know me, I will let you know that I grew up without a father. I was raised by a single mother who definitely did her best and her best was more than enough. However, when I met my husband and was introduced to his father, I practically found in him the dad I didn’t realize I needed all along. He welcomed me with such a humble and loving heart. He showed me what a healthy marriage looked like. He was like no man I had ever met. Anybody who knows him will tell you that this man is by far the nicest man on earth. I can go on an on about all the qualities he has and why I admire him so much, but then this post would be too long for anybody to read. To keep it short and sweet, I will just say that I am a very lucky lady and am touched by the love this man shares with others, especially his family.
Not only do I admire him greatly but my husband seems to also think he’s the best man on earth. I imagine everyone feels the same for their father, but I have noticed my husband picking up some of the same characteristics from his dad. He is like him in so many ways and I think it is wonderful that he has such a great role model. As if it wasn’t enough that I just spent so much time telling you about my father-in-law, I can share a little bit about my husband, the father of our four beautiful daughters. I think the fact that he’s still here in a home with 5 girls shows just what a rock star he is. As I am typing this, late at night, he is actually taking care of our one year old because she took a late nap and is now up late at night. I feel so incredibly bad that after going into the office today, taking us out to a trampoline park, out for dinner, coming home and helping with bedtime routines for our four girls which included bath time and story time, he is now entertaining the baby of the house until she gets tired so that I can work on my blog. If that is not a dedicated father, I don’t know what is. He has always been very helpful with our daughters but I do feel that ever since our fourth one came, he has stepped up his game even more.
If you have a large family, you know the struggle. It is hard! It is incredibly hard! However, he is most definitely the person I want to travel this journey with. He is, by far, my favorite person in the world. Despite all the chaos that sometimes comes from having four children, he stays positive. He laughs. He jokes. He is brilliant. He is funny. He is simply amazing!
For these reasons and many more, it is an honor to celebrate Father’s Day with him. I think it is very sweet that our daughters are counting down the days left until Father’s Day as it shows how eager they are to celebrate their amazing father as well. Without further due, here is a cute idea that I have on creating a simple, yet festive Father’s Day celebration for the special dads in your life. I have also included my brunch menu that I am sure will be loved by both my husband and father-in-law. Father’s Day Brunch Menu:
My plan is to have my in-laws come over our house on Father’s Day. Since they are not early risers, brunch is perfect for us! My father-in-law and husband love a traditional Mexican breakfast, and therefore I have planned to make a simple, yet delicious Mexican meal with includes the following:
-Eggs
-Beans
-Pan-fried Sliced Potatoes
-Home-made salsa
-Flour tortillas
The Beans: I always start by making the beans as they take the longest to make. I also always use my Instant Pot to make my beans. I do not have the time to baby sit them and this way, I simply put them in the pot, set it on high pressure for 45 minutes and let the Instant Pot do the work.
The salsa: We love home-made salsa at our house. We also love experimenting with different ways of making it. The one I am choosing to make this time is a very simple salsa but adds so much flavor to so many Mexican dishes. My husband loves his salsa spicy so this will have some heat to it. If you cannot handle too much heat, I recommend only using one pepper
The tortillas: There is nothing like good old home-made flour tortillas. Unfortunately, I am not that skilled nor have the patience to learn how to make them. We have found some delicious ones at a local tortilleria (tortilla factory) but our favorite are the uncooked organic flour tortillas from the brand Tortilla Fresca that we get at Costco. If you have not tried them, I encourage you to give them a try.

As I stated, it is a very simple meal, but my husband loves it!
